In a large saucepan, heat olive oil over medium heat. Add onions and Pacific Rim Seafood & Poultry Rub and cook until softened. Add stock and green peas, then bring to a boil. Reduce heat to medium-low and simmer (5-7 minutes).
In the meantime, place chives, 3 tbsp. of olive oil, and crushed peppercorns into a blender and process, stopping often to scrape down the sides, until you get a puree. Remove from blender and set aside in a ramekin. Remove soup from stove and let cool. Place soup into blender and process until very smooth. Adjust seasonings as needed and ladle soup into bowls. |
