Asian Prawns with Parsley & Shallots (Serves 4)

INGREDIENTS

  • 2 pounds prawns, unpeeled but deveined
  • 2 tbsp. In a Pinch Southeast Asian Rub
  • 1 bunch scallions, chopped
  • 2 shallots, minced
  • 4 garlic cloves, chopped
  • ½ cup chopped parsley leaves
  • ¼ cup melted butter
  • ½ cup olive oil
 
INSTRUCTIONS:

Preheat oven to 350°.Take cleaned and deveined prawns, pat dry, coat with Southeast Asian Rub. In a small bowl, mix scallions, garlic, shallots, and parsley and spread mixture over prawns. Combine olive oil and butter and pour over prawns. Bake for 5 minutes or till prawns curl and turn pink.

 
SERVING SUGGESTION :
Serve with Chestnut Rice.
