Chopped Steak on Herbed Potatoes (Serves 4)

INGREDIENTS

  • 1 pound chopped steak or ground beef
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. In a Pinch Rib & Roast Rub
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp. In a Pinch Italian Herb Seasoning
  • 1 cup beef stock
  • ½ cup peas
  • 3 tbsp. softened butter
  • 1 pound boiling potatoes, peeled and boiled until tender, drained and set aside
  • Sour cream and chopped cilantro for garnishes
 
INSTRUCTIONS:

Season chopped steak or ground beef with In a Pinch Rib & Roast Rub. In a heavy skillet over medium heat, brown steak in olive oil for several minutes. Add onions and garlic and incorporate into meat mixture. Add in beef stock and peas and cook until peas are tender. Beef stock should be reduced a bit. Set aside.

Slice cooled potatoes into ¼" slices and place onto a baking sheet brushed lightly with olive oil. Mix softened butter with Italian Herb Seasoning and spread lightly onto potato slices. Spoon meat mixture onto potato slices, and bake in oven for 10 minutes at 300°.

 
SERVING SUGGESTION :
Serve with sour cream and cilantro.
