On the previous night, or at least 2 hours prior, pat dry salmon and sprinkle Citrus Dill Seafood Rub on both sides. Cover in plastic and refrigerate. In a skillet over medium heat, cook shallots in olive oil for 1 minute. Place salmon in pan, cook for 2-3 minutes, then turn over to cook an additional 2-3 minutes to desired wellness. Total estimated cooking time is 4-6 minutes (salmon should flake when tested with fork).
Remove fillets from pan and set aside. Toss in Riesling, butter and dill and reduce sauce for 1 minute. |
