Make several incisions on each side of trout. In a small bowl, combine Citrus Dill Seafood Rub, lemon juice, and cilantro and work mixture into and onto fish.
In another bowl, brush mushroom slices with butter and insert into cavity of trout along with lemon and lime slices. Cover trout in plastic wrap and marinate in refrigerator for an hour.
When ready, remove plastic wrap and place trout on a well oiled grill rack. Grill over a low heat, basting frequently with melted butter. Cook about 5 minutes per side. |
