Lemon Pepper Swordfish with Haricots Verts (Serves 4)

INGREDIENTS

  • 4 swordfish steaks
  • 4 tbsp (or more as desired) In A Pinch Salt-Free Lemon Pepper
  • 1 pound haricots verts (string beans)
  • ½ cup vegetable stock
  • ¼ cup parsley, chopped
  • 1 tbsp extra virgin olive oil
  • Slices of lemon for garnish
 
INSTRUCTIONS:

On the previous night, or at least 2 hours prior, coat swordfish steaks with In A Pinch Salt-Free Lemon Pepper. Cover dish with plastic wrap and refrigerate.

Preheat oven to 350°. Set the swordfish steaks onto a wire rack (lightly coated with olive oil) inside a baking pan. Bake for 20-25 minutes, until desired wellness. In a pan over medium heat, stir fry the string beans in olive oil for 2 minutes. Add in stock, cover pan, and cook for 2 more minutes. Remove pan from heat and stir in parsley.

 
SERVING SUGGESTION
Serve string beans with swordfish steaks and garnish with sliced lemon.
