Mushrooms and Artichokes in Green Peppercorn Sauce (Serves 4)

INGREDIENTS

  • 2 tbsp. unsalted butter
  • 1 tbsp. extra virgin olive oil
  • 2 cloves of garlic, halved
  • 1 tbsp. shallots, chopped
  • 1 tbsp. In a Pinch Green Peppercorns, crushed in mortar
  • 1 pound fresh, firm white mushrooms, sliced
  • One 14 oz. can of artichoke hearts, rinsed, patted dry, and quartered
  • ½ cup heavy cream
  • Fresh chopped basil leaves for garnish
 
INSTRUCTIONS:

In a heavy saucepan over medium heat, melt butter and cook garlic, stirring until slightly golden. Remove garlic from pan, add shallots, and cook for 1 minute. Add mushrooms and cook, stirring for 3 minutes. Increase heat to medium and add artichokes and crushed Green Peppercorns, then cook for several minutes. Add cream and cooked until thickened.

 
SERVING SUGGESTION :
Garnish with basil and serve with crusty bread.
