Mushroom Ceviche (Serves 4)

INGREDIENTS

  • 1 pound white mushrooms, cleaned and wiped dry
  • ¼ cup diced celery
  • ½ cup diced red onion
  • 2 cloves of garlic, chopped
  • 1 tbsp. In a Pinch Salt-Free Lemon Pepper
  • 1 tbsp. extra virgin olive oil
  • ½ roasted red pepper, seeded and thinly sliced
  • 1 small jalapeno, seeded and diced
  • Kalamata olives for garnish
 
INSTRUCTIONS:

In a small saucepan, sauté mushrooms and celery in olive oil for 2 minutes. Set aside in bowl and cool. Place all other ingredients, except olives, into a blender and pulse for a few seconds to combine. Place mixture into bowl of mushrooms, cover with plastic wrap, and marinate in refrigerator for 2-3 hours.

 
SERVING SUGGESTION :
Serve ceviche in martini glasses as an appetizer. Garnish with olives.
