In a medium stock pot, prepare penne according to package instructions, drain (reserving 1 cup of pasta liquid), and return pasta to pot. In a large skillet over medium high heat, cook sausage in 1 tbsp. of olive oil for 8-10 minutes or until cooked through. Drain sausage and set aside.
Carefully wipe skillet with paper towel. Heat remaining olive oil in skillet and sauté zucchini with garlic and Italian Herb Seasoning until zucchini is tender. Add in sausage and toss for 2 minutes. Stir sausage and zucchini mixture into pasta, adding reserved pasta liquid if necessary. Transfer to serving plates and garnish with Parmesan and parsley. |
