Shiitake Mushroom & Tofu Soup (Serves 4)

INGREDIENTS

  • 4 cups vegetable stock
  • 1 pound extra firm tofu, patted dry, and diced
  • 1 cup Shiitake mushrooms, stems removed, cleaned, and sliced
  • 2 tbsp. light soy sauce
  • 2 tbsp. In A Pinch Pacific-Rim Seafood & Poultry Rub
  • 2 tbsp. dry sherry
  • 1 tbsp. cornstarch mixed with 1 tbsp. water (used as a thickening agent)
  • Freshly grated ginger
 
INSTRUCTIONS:

In a stockpot over medium heat, bring vegetable stock and mushroom slices to a boil, then lower flame. Add in Pacific-Rim Seafood & Poultry Rub, sherry, and cornstarch mixture. Cook for 10 minutes. Add in diced tofu and simmer for 5 more minutes. Serve soup with grated ginger on top.
