Spicy Mashed Chickpeas (Serves 4)

INGREDIENTS

  • 2 tbsp. extra virgin olive oil
  • 2 cloves of garlic, chopped
  • One 15 oz. can of chickpeas, drained and rinsed
  • ½ cup vegetable stock
  • 1 tbsp. In a Pinch Spicy Pepper Steak Rub
  • ¼ cup heavy cream
 
INSTRUCTIONS:

In a medium sized sauce pan over low heat, cook garlic for a few seconds to release the flavor. Add chickpeas, vegetable stock, and Spicy Pepper Steak Rub for and cook for 5 minutes. Add heavy cream and cook for another minute. Remove from heat and let mixture cool. When cooled, place mixture in blender or food processor and process until smooth.

 
SERVING SUGGESTION :
Serve with pita chips and crudités.
