Spicy Chinese Noodles with Bok Choy (Serves 4)

INGREDIENTS

  • 3 cups vegetable stock (optional)
  • 2 tbsp. peanut oil
  • 2 cloves garlic, chopped
  • 2 tbsp. ginger, chopped
  • 1 tbsp. In a Pinch Pacific Rim Seafood & Poultry Rub
  • 1 bunch bok choy, washed, bottoms cut off, and sliced thinly
  • 1 tsp. light soy sauce
  • 1 tsp. mirin (sweet Asian rice wine)
  • 1 pound Chinese noodles (can use lo mein noodles)
 
INSTRUCTIONS:

Bring 3 quarts vegetable stock or slightly salted water to boil. In a large skillet over medium heat, place oil, garlic, ginger, and Pacific Rim Seafood & Poultry Seasoning. Cook for 2 minutes, or until fragrant, and before garlic turns golden. Add bok choy and toss for 2 minutes.

Remove pan from heat, shut off flame, and add soy sauce and mirin. Add noodles to boiling water and cook till al dente, abut 5 minutes. Drain noodles and return skillet to medium heat. Add noodles to skillet and toss until noodles are coated, and serve.
