Tomato & Vegetable Stew (serves 4)

INGREDIENTS

  • 2 tbsp. extra virgin olive oil
  • 2 leeks, thinly sliced
  • 1 can diced tomatoes
  • In A Pinch Tellicherry Peppercorns, cracked
  • 3 cups low-salt vegetable broth
  • 6 turnips, peeled and diced
  • 3 parsnips, peeled and diced
  • 1 pound baby carrots, peeled
  • Freshly chopped parsley
 
INSTRUCTIONS:

Heat the oil in a casserole pan over medium heat, add leeks, and cook till tender. Add tomatoes and peppercorns to taste, and simmer until mixture thickens. Add broth and bring to a low boil. Add parsnips, turnips, and baby carrots and simmer till tender. Stir in chopped parsley and serve.
